Grilled Vegetables with Balsamic Vinaigrette

INGREDIENTS
 

  • 2 Courgettes, cut into 1/4" slices
  • 1/2 Sweet White Onion, cut into 1 1/2" pieces
  • 1 Red Bell Pepper, cut into 1 1/2" pieces
  • 1 tablespoon Udo’s Choice Ultimate Oil Blend
  • 1 teaspoon balsamic vinegar
  • 1/4 teaspoon finely minced garlic
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste


Serves 2

METHOD

Grill vegetables until tender. In a large bowl, mix together Udo’s Oil, vinegar, garlic and parsley. Add vegetables and toss with vinaigrette. Season to taste.
