Raw Pasta with Avocado

  • 2 Courgette
  • 1 Avocado
  • 2 tbspn Yoghurt
  • 1 tablespoon Ultimate Oil Blend
  • Lemon Juice
  • Pinch Himalayan Salt
  • 2 Spring Onion, chopped
  • 4 Green Geans, sliced lengthways

Serves 2


Using a spiraliser turn the courgette into noodles and transfer to serving bowls. Mash the avocado and yoghurt with a fork and mix in the oil, a squeeze of lemon juice and a pinch of salt. Spoon the mixture onto courgette base and top with spring onions and green beans.
Note: if you do not have a spiraliser you can use a veggie peeler to make pasta ribbons.
