Tuna & Avocado Salad Wrap

INGREDIENTS
 

  • 2 6oz cans of chunk light tuna, drained
  • 1 Avocado, cut into 1/2” pieces
  • 1/4 cup Red onions, thinly sliced
  • 1/3 cup Tomato, chopped
  • 1/3 cup Celery, chopped
  • 3 tablespoon Udo’s Mayonnaise (see recipe in Tips section)
  • 1 1/2 tablespoon Lemon juice
  • 2 cups Lettuce, shredded
  • 1/4 teaspoon Salt
  • 2 Large whole wheat tortillas
  • Salt and pepper to taste


Serves 2

METHOD

In a bowl, mix tuna, avocado, onion, tomato, celery, mayonnaise, lemon juice, salt and pepper. Place half of lettuce and salad mixture onto each tortilla. Roll tortillas into wraps. Cut each wrap in half.
