Bean Mix and Guacamole & Udo's Oil


  • 500g Mixed Beans (Red Kidney, Pinto & Black Eye)
  • 1 Red Pepper
  • 1 Green Pepper
  • 1 Yellow Pepper
  • 1 Onion
  • Mixed Herbs (Parlsey, Thyme & Sage works well)
  • 3 or 4 Tomatoes
  • 4 Cloves of Garlic


For the guacamole:

  • 2 Avocados
  • 2 Cloves of Garlic Dressing
  • 2 tablespoons of Udo’s Choice Ultimate Oil Blend
  • 1 tablespoon of Cider Vinegar
  • Pinch of Cayenne Pepper
  • Pinch of Salt
  • 1 teaspoon Coarse Mustard

Serves 4


Put the beans and their juices into a pan with an onion studded with garlic cloves, along with a mixture of herbs. Bring to the boil for 10 minutes and leave to simmer until soft (if using dried beans remember to soak them overnight and change the water). Drain the beans and take out the onion and herbs. Deseed and dice the peppers. Chop the tomatoes, mix in with the peppers and add the beans.

For the guacamole: Scrape the inside of the avocados into a bowl. Chop the garlic and add to mashed avocado. For the dressing: Mix the oil, cider vinegar, cayenne pepper, salt and mustard in a small jar. Pour the dressing into the bowl containing the beans, tomatoes and peppers and mix together.

To serve: Place the mixture on a plate, top with a generous dollop of guacamole and enjoy!
